Wagyu Beef, Caramelized Onion and Feta Burgers

Cooking Method 

  1. Begin by making the caramelized onions. Pre-heat a medium sized frying over a low heat pan with the 2 tablespoons of oil and add the sliced onion. Add the pinch of sea salt and leave to soften, stirring every few minutes. Once the onion is beginning to look translucent, add the balsamic vinegar and brown sugar. The onions will release a lot of moisture – keep stirring every few minutes and leave to simmer until the liquid in the pan is thick and syrupy. Remove from the heat. We will use half of the caramelized onions in the burger patties and half will be used for serving.
  2. Combine all of the burger patty ingredients with the beef mince and mix well with your hands. Shape into 4 large beef patties, cover and refrigerate until ready to use. Let the patties come to room temperature before cooking, this will take about half an hour.
  3. Pre-heat a large frying pan or BBQ hot plate and using a splash of oil, fry the burger patties until golden on each side and cooked through. As soon as the patties are removed from the heat, place a slice of cheese on top to melt with the residual heat and keep aside as the remaining burger ingredients are prepared. Toast the insides of the brioche buns on the frying pan – this will soak up the delicious juices released from the burger patties and will nicely warm the buns.
  4. Layer the burgers together starting with a layer of mayonnaise on the base of the brioche buns, followed by the burger patty, caramelized onion, lettuce, pickle and remaining favourite burger fillings followed by the top of the bun! Enjoy with your choice of burger sides such as oven wedges or hot chips!
