USI ordered Wagyu. This meat was barely marbled at all and cooked to medium rare , yet still tough. I will not order again. I order prime beef often. I understand grass fed. But , this was just some grass fed tough beef. There was nothing Wagyu about it. I chalk it up to being ripped off this one time. I was extremely disappointed.
USI cut the ribeye in half, half for Easter and half as a treat to my son in FL. The first serving turned out fine, but there was way too much fat that had to be cut out and because of the fat, it was nearly impossible to eat what little meat was around the bone (mu Aunt's favorite part). The second portion seemed to have way more fat and hard to cut around it to get the meat that might be edible. I was very disappointed in this purchase, however, what meat we were able to garner, was very tender and delicious. Renee Bliss
